Vineyard Notes
A slightly east facing slope this block gets a good amount of both morning and some of the afternoon sunlight. The morning sun helps dry the fruit out from dew or any rain that could have happened overnight which is critical for the finicky and tight clustered Pinot Noir. The afternoon warmth helps us develop some power and flavors in the earlier ripening variety. The block also sits on gravelly loam that is very well drained allowing for good concentration and fresh minerality. It sits at 850 feet above sea level on the West side of Canandaigua Lake allowing for good temperature swings from day to night also helping prolong the growing season and preserve freshness.
Winemaker Notes
The 2021 White Pinot Noir was destemmed and only the “hearts” of the pressing were used and sent cool to a stainless steel settling tank. It settled for 48 hours before being racked to neutral and new French oak barrels where the wine was allowed to go through spontaneous fermentation. Fermentation lasted on average 32 days with peak temperatures around 62 degrees. The wine was never racked and simply topped up post fermentation allowing batonnage bi-weekly on the gross lees for 6 months. After 9 months total elevage the barrels were blended together, filtered and fined with bentonite for protein stability prior to bottling.
Food Pairing Notes
Caesar Salad, grilled chicken burgers, truffled fries, and/or grilled Berkshire pork chops.
