Winemaker Notes
The 2023 Dancing Bear Blaufrankisch Rose is made from direct to press fruit meaning that there was almost no skin contact. The fruit was simply destemmed directly to the press and treated as if it was a white wine at that point.
Fermentation was cool at 58 degrees and lasted 29 days to preserve acidity. Post fermentation the wine was racked and immediately chilled to start cold stabilization and preserve the fresh fruit and acidity. The wine was filtered but no fining was necessary, including bentonite. Bottled after force carbonation on January 15th, 2024.
