The Café Director at Heron Hill Winery is a seasonal full-time position. Part-time start date would begin mid-April, with full-time start date in mid-May, with Café duties running through mid-November. Some evenings required, with weekends mandatory. The Café Director is responsible for all café operations, Tunes in the Tent events and multiple small private catered events at Heron Hill Winery. Responsibilities include but are not limited to staffing, menu development, food preparation and serving, food costing and ordering, and maintaining high standards of customer service. The Blue Heron Café has become an integral part of Heron Hill Winery’s vision for providing a food and wine destination in the Finger Lakes region.
Responsibilities:

Personnel
- Interview, evaluate, and hire candidates for line cook, wait staff, and SA positions.
- Ensure that the staff is complying with all policies and procedure put forth by Heron Hill and practices safe food handling procedures.
- Maintain a clean, organized, and safe facility that complies with DoH and DoL regulations and complies with the Heron Hill safety policies.
- Supervision – a good candidate will supervise both kitchen and wait staff.

Line time
- It is expected that a good candidate for this position will maintain an active role in the day-to-day operation of the Café. With labor costs in mind, he/she is expected to fulfill line cooking duties.

Customer communication and menu development
- Develop a menu utilizing fresh, local ingredients that will be well received by the public.
- Booking parties and group lunches (including menu development and pricing).
- Day to day (as the line is in full view of the customers).
- Phone and email (in a professional, prompt, and courteous manner).

Inventory and ordering
- Maintain a stock of perishable and dry products sufficient to meet interim needs whileavoiding spoilage.
- Maintain an organized dry storage, cooler, and freezer.
- Linen.
- Beverage – non-alcoholic, beer, invoicing of wine from Heron Hill.

Financial
- At times, it may be necessary for a good candidate to close the register and credit card machines.
- Periodic evaluation of Profit and Loss.
- Pricing of menu items, catering and features.
Qualifications:
- Serve Safe Management Certification.
- Ideal candidate has kitchen management experience as well as front of house restaurant experience, and a passion for utilizing Finger Lakes products and produce.
- Good working knowledge of DoH standards and regulations.
- Personal schedule that allows for the applicant to perform the duties of the position appropriately.
